Between my twin sister and I, it is difficult to make plans with other friends. We love catching up with old pals but our schedules are so jam-packed it could be weeks until we could coordinate a time with a buddy of ours. Because it’s been such a long time since the three of us had been reunited, I couldn’t help but try to make this meeting special! My version of something special is a batch of homemade chocolate chip cookies. There was a problem though.This friend of ours is gluten intolerant.
For this reason, my traditional gluten-rich recipe certainly would not be a welcomed special surprise. Instead I crafted a chocolate chip cookie that won the approval of both my gluten-intolerant friend and my gluten-loving twin sister!
